1 Sharp knife for thin, even cucumber slices
1 Cutting board
1 Mixing bowl large enough to toss cucumbers freely
1 Colander for draining salted cucumbers
1 Paper towels to pat cucumbers dry
1 Whisk for the dressing
1 Measuring Spoons optional
- 2 English cucumbers, thinly sliced large
- 1/2 salt salt for salting/draining
- 2 tbsp rice vinegar
- 1 tsp honey
- 1/2 tsp sesame oil
- 1 tbsp fresh dill or mint, chopped
- 1/4 red onion, thinly sliced
- black pepper to taste, optional
Slice the cucumbers thinly and toss them with the salt in a large mixing bowl.
Let the cucumbers sit for 15–20 minutes to release excess water.
Drain the cucumbers in a colander, then pat them dry with paper towels.
In a small bowl, whisk together the rice vinegar, honey, and sesame oil.
Add the drained cucumbers, red onion, and fresh dill (or mint) to the dressing and toss to combine.
Season with black pepper to taste, then chill in the fridge for at least 10 minutes before serving.
