Ingredients
  

  • 4 peaches ripe, halved and pitted
  • 1 tbsp honey or maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/3 cup rolled oats old-fashioned
  • 2 tbsp walnuts or pecans chopped
  • 1 tbsp coconut oil melted, or unsalted butter
  • 1 pinch sea salt
  • 1 tbsp Greek yogurt optional, plain, for topping

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper.
  • Arrange the peach halves cut-side up in the baking dish.
  • In a small bowl, mix the honey, cinnamon, and vanilla extract, then brush or drizzle evenly over each peach half.
  • In a separate bowl, combine the oats, chopped nuts, melted coconut oil, and a pinch of sea salt, and mix until it forms a loose crumble.
  • Spoon the oat crumble mixture into the center of each peach half, pressing gently so it holds together while baking.
  • Bake for 18–20 minutes, until the peaches are soft and the crumble is golden.
  • Let cool for 5 minutes, then serve warm with a small dollop of Greek yogurt if desired.
