Ingredients
  

  • 1.5 lbs boneless, skinless chicken breast
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1 cup cooked brown rice or cauliflower rice
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • 1 cup corn kernels
  • 1 cup cherry tomatoes halved
  • 1/2 red onion diced
  • 1 avocado sliced
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup low-fat Greek yogurt sour cream swap
  • fresh salsa to taste

Instructions
 

  • Make the marinade: In a bowl, whisk together the olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, and salt.
  • Marinate the chicken: Add the chicken breast to the marinade and coat well. Refrigerate for at least 20 minutes, or up to 8 hours for deeper flavor.
  • Cook the chicken: Heat a skillet over medium-high heat. Cook the chicken for 6–7 minutes per side, until fully cooked and lightly charred.
  • Rest and slice: Remove the chicken from the skillet and let it rest for 5 minutes. Slice into strips.
  • Build the bowls: Divide the cooked brown rice or cauliflower rice, black beans, corn, cherry tomatoes, and red onion evenly among 4 bowls or meal-prep containers.
  • Add toppings: Top each bowl with sliced chicken, avocado, cilantro, Greek yogurt, and fresh salsa.
  • Serve or meal prep: Serve immediately, or refrigerate the bowls for easy lunches throughout the week.
