In a separate bowl, toss the dried chickpeas with 1 tablespoon olive oil, a pinch of salt, and a pinch of paprika.
Preheat the air fryer to 380°F (193°C) for 3 minutes.
Place the chicken thighs in the air fryer basket in a single layer. Air fry for 12–14 minutes, flipping halfway, until the internal temperature reaches 165°F (74°C).
Remove the chicken and let it rest for 5 minutes before slicing.
Add the seasoned chickpeas to the basket and air fry at 400°F (204°C) for 8–10 minutes, shaking the basket halfway, until crispy.
Toss the broccoli florets with the remaining olive oil, salt, and pepper. Air fry at 400°F (204°C) for 7–8 minutes, shaking once, until edges are slightly charred.
Divide the cooked quinoa among four meal prep containers. Top each with sliced chicken, crispy chickpeas, and air-fried broccoli.
Squeeze fresh lemon juice over each bowl and sprinkle with chopped parsley before sealing containers.
